Chipotle Black Bean and Rice Stew

I found this delicious stew on the greatest little blog "28 cooks". It is sooo good. Winter is almost upon us and this is a perfect meal to warm your belly.

- 1 bay leaf
- 1 cup vidalia onion, minced
- 2 celery ribs, chopped
- 2 Knorr Chipolte Bouillon cubes (or 1-2 well-minced canned chipotle peppers)
- 1 cup frozen white corn kernels
- 2 tbsp olive oil
- 3 cloves garlic, chopped
- 2 (15 ounce) cans black beans
- 2 tsp chili powder
- 1 (32 ounce) carton vegetable stock
- 1 (15 ounce) can diced tomatoes
- 1 tsp ground coriander
- 1 1/2 tsp cumin
- 1 (8 ounce) can tomato sauce
- 1 cup white rice

- 2 tsp chili powder shopping list
- 1 (32 ounce) carton vegetable stock shopping list
- 1 (15 ounce) can diced tomatoes shopping list
- 1 tsp ground coriander shopping list
- 1 1/2 tsp cumin shopping list
- 1 (8 ounce) can tomato sauce shopping list
- 1 cup white rice shopping list
How to make it
- Put a large pot over medium heat.
- Put in olive oil and saute your bay leaf, celery, onions, and garlic for about 4 minutes.
- Crumble up your chipotle cubes into the pot and add corn as well as 2 cans of undrained black beans.
- Add chili powder, cumin, and coriander. Stir this well.
- Add in tomato sauce, tomatoes and stock.
- Cover the pot and bring to high-heat and a boil.
- Now add rice and bring back to a boil again. Then lower heat, cover, and let simmer until the rice is tender.

Was this review helpful? Yes FlagThanks for the recipe! I added a pound of sweet italian turkey sausage, but otherwise stuck w/ your recipe. I ate a bowl and then came back about 45 minutes later to start putting the rest up, and realized that the rice had soaked up a lot more of the broth, so now it's almost just rice and beans (still delicious!): do you have any suggestions of how to avoid this? I feel like even if I moved the stew from the cooking vessel right away, the rice would continue soaking up the liquid. I wonder if it'd taste as good if I prepared the rice on the side, maybe using some of the broth to add flavor, and just reheated it in the broth every time I want a serving? I'll probably try that next time I make this.
